3/4 cup crumbled feta cheese (4 oz.)
3 tbs. nonfat plain yogurt (I used greek yogurt)
1 tbs. fresh lemon juice
2 tsp. dried oregano
1 tsp. finely grated lemon zest
1/4 tsp. ground black pepper
Sandwich
4 whole wheat pitas
4 large pieces of romaine lettuce, torn in halves
1 English cucumber, sliced in half moons
1/4 cup fresh mint leaves
3/4 lb. thin sliced turkey breast
- Combine the feta cheese and yogurt in a medium sized bowl. Mash with a fork. Add lemon juice, oregano, lemon zest, and pepper. Stir.
- Cut the pitas in half. Stuff each half with lettuce. Add the spread, then fill with cucumber, mint leaves, and turkey. Dividing the ingredients evenly among the pita pockets.
